Pineapple, Cranberry, Pistachio Cream Cheese Roll

This is a new addition to my cheese ball arsenal, but I love a new gluten free appetizer whenever I can find one.
It's quick and easy to make, and so good!
Serve with your favorite gluten free crackers or pretzels for a sweet, salty treat, celery for a more neutral taste and fruit chips if you want to go all in on the sweetness factor.
Ingredients
8 ounces Cream Cheese, softened
1/2 cup Crushed Pineapple, drained
1/2 cup Dried Cranberries, chopped and divided
1 tablespoon Honey or Golden Syrup
1/2 teaspoon Vanilla or Vanilla Bean Paste
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 cup Pistachios, chopped
Directions
In a bowl combine cream cheese, crushed pineapple, dried cranberries, honey or golden syrup, vanilla bean paste, cinnamon and ginger until well mixed.
Mix remaining Dried Cranberries and chopped pistachios and spread out on a piece of clear plastic wrap.
Shape the cream cheese mixture into a ball or log shape and roll in the cranberries and pistachios chill for at least 2 hours to allow the flavors to develop fully.
