Turkey Fried Rice

Not every recipe needs a back story.

This recipe is an easy way to use leftover turkey or chicken, and is easy to make.

Note: It's best to make the rice for this meal a day or two before to help with the texture of the rice in the finished dish.

Ingredients

Enough oil to cover the bottom of a wok

2 eggs. beaten

2 cups uncooked rice, made and refrigerated overnight

1-2 cloves garlic, minced or garlic confit - here's the recipe to make it

1/2 cup frozen peas

1/2 cup broccoli

2 cups leftover turkey

1 tablespoon sesame oil

Tools

Wok

Spatula - I use wood because my pan is non stick

Instructions

Add the oil to the pan and set the heat to high if you're using a wok.

When the oil is shimmering, add the 2 beaten eggs.

As the eggs start to cook, break them up with your spatula, and when they are almost cooked, add in your refrigerated rice.

Stir in your minced garlic or garlic confit - here's the recipe to make that -  and mix in.

Once that is done, add the frozen peas and broccoli.

Incorporate them, stirring until everything is warmed through.

Stir in your leftover turkey and finish with sesame oil.

Note: If you want to have a pretty presentation, pack some of the friend rice in a small bowl until it is firm. Place a plate on top of the bowl and flip it over. Remove the bowl and your rice should retain the shape of the bowl and look pretty on your plate. Enjoy! 

Also, if you use fresh vegetables, add them in before the rice if you prefer them on the tender side or after the rice if you prefer them crunchy.
