Gluten Free Turkey Noodle Soup

Soup is a comfort food for me, and it's one of the few foods I can eat several days in a row if I find one I like. This one, that I usually make after Thanksgiving, is one of my favorites.

As with many of my recipes, I have a secret ingredient that elevates the soup to another level, and in this case, it's ketchup, and I am begging you to try it before you judge it because the little bit that you add to the soup makes it a treat.

Preparation time: 15-30 minutes

Ingredients

2-3 tbs of olive oil

1 onion, diced

1 cup baby carrots, sliced

1 cup celery, diced

1 15 ounce can of crushed tomatoes

70 ounces of turkey and/or chicken stock

Chopped garlic, measured with your heart, or 1-2 cloves if you're a newbie (in the video, I use garlic confit that I make myself)

1-1/2 cups diced or shredded turkey

1-2 tablespoons of ketchup

1/2 of a 9 ounce box of Jovial gluten free egg tagliatelle, broken to the size you like or gluten free noodle of your choice

Directions

Heat 2-3 tbs of olive oil to the stock pot on medium heat until the oil shimmers.

Add your onions, carrots and celery and saute for 2-3 minutes until the veggies start to soften.

Add the crushed tomatoes and stir.

Pour in your stock, and if you choose to use a combination of water and stock, be sure to add some chicken bouillon or chicken Better than Bouillon

Let that simmer for a while so the veggies are the softness you like, than add your leftover turkey, a couple of tablespoons of ketchup (trust me on this) and your noodles. 

Notes

I am going to tell you once more to trust me on the ketchup because I know it sounds weird to people, but truly, it makes this soup something very special. Enjoy!
