Gluten Free Mac and Cheese with Turkey and Broccoli

It used to be if you were gluten free that you had to give up so many things you love.
These days, it's easier to make yummy comfort food and enjoy every bite, just like you did before you were gluten free.
That's what I love about this recipe.
It hit that comfort food need without making me sick, and it can do the same for you.

Ingredients
1/2 box Gluten free Barilla elbow macaroni
1 cup Milk
8 ounces Velveeta Cheese, cubed - see notes about this
1 1/2 cups Low-fat Sharp Cheddar Cheese
1/2 - 2 cups turkey
1/ of a package of frozen, chopped broccoli, thawed
1 teaspoon garlic powder or more to taste
1 teaspoon onion powder or more to taste
Dash of Cayenne, to taste
Low-fat Mexican Cheese blend, to taste
Tools
Pot deep enough to easily boil the pasta
Strainer
Whisk
Spoon or rubber spatula
9x13 baking dish
Instructions
Put enough water to cover your pasta plus an inch or two in your pot
Pre-heat your oven to 350 degrees
Add pasta to boiling water and cook for 7 minutes.
Drain and pour into the 9x13 baking dish.
In the same pan that you cooked the pasta in, add the milk and Velveeta cheese into the pan.
Cook on medium heat, stirring constantly until the Velveeta is melted.
Add the sharp cheddar and stir until completely melted and smooth again.
Stir in the broccoli and turkey, coating them with the cheese sauce.
Pour into the 9x13 and stir until the cheese mixture and pasta is fully combined.
Sprinkle with the Mexican Cheese.
Cook in the oven until your mac and cheese is warm and bubbly and the cheese is melted.
Note: Velveeta is not specifically listed as gluten free, which means there is some chance of cross contamination. If you have been diagnosed celiac, you may want to opt for another soft cheese that is certified gluten free.
Cooking time for this dish depends on how you like your cheese on top. My family prefers the cheese and the pasta to be soft. Others prefer that the cheese be almost like a crust. You do you. Just make sure everything is cooked through and enjoy.
